Precisely because they receive industrial additions of ingredients (sometimes in much higher quantities), they do not have such a balanced nutritional profile.

Cheeses are rich in protein, vitamin A, and calcium. However, in addition to the high saturated fat content typical of milk, they are products with high energy density (due to water loss during processing) and high sodium concentration (due to the addition of salt).

Ultraprocessed cheeses, which contain acidulants, stabilizers, and preservatives, fall into the red group. Therefore, it is best to avoid them.

The group of ultraprocessed foods is associated with a decline in nutritional quality and a higher risk of obesity, hypertension, and cardiovascular diseases. Examples of ultraprocessed cheeses include cheddar and catupiry.
